This is one of my favorite lunches! I like to make a huge bowl of this and eat on it for lunch for a few days. Pile some up in a lettuce cup or a grain free flatbread like the one used in my Grain Free Mexican Flatbread and you’ve got a super satisfying lunch. Mediterranean Chicken Quinoa Salad is also equally delicious as a vegetarian dish, and I often do leave out the chicken and serve it as a side dish for dinner. Another benefit of leaving out the chicken is that it makes this dish a perfect picnic food, because it doesn’t need to be refrigerated!
Mediterranean Chicken Quinoa Salad not only has some of my favorite flavors (capers and olives and herbs oh my!) but it’s also super nutritious. Quinoa is usually referred to as a grain, but it’s actually a seed. However it still needs proper preparation, which involves soaking and if you have time, sprouting. I also add in another nutritional powerhouse in the form of my homemade bone broth, by using it to cook my quinoa rather than plain old water.
This recipe also has lots of great swap out options. For instance, if you don’t love kalamata olives like I do, go ahead and use green olives. I’ll never know! Also, if you really dislike basil (although I can’t imagine how anyone would) oregano would be amazing! So make it your own!
- Cook quinoa per package instructions and allow to cool.
- In a large bowl combine cooked quinoa, cooked chicken, tomatoes, roasted bell pepper, capers, caper brine, olives, lemon juice and olive oil.
- Stir well to combine.
- Toss in the scallions, parsley and basil and toss to combine.
- Taste and season with sea salt and pepper. Go easy on the sea salt at first as the capers and olives are quite salty!
- Chill and serve!
