As I strolled through the natural foods section of my grocery store, looking for a quick and simple, yet delicious dessert to serve for my last Essential Oils 101 class, I had in mind that I really wanted brownies! I thought I would make it easy on myself and just pick something up, throw it together and bake it off real quick. Nobody would have to know, right? Right. Although that’s not normally how I operate, just this one time wouldn’t hurt. And I gotta hand it to ’em, there are some REALLY great organic boxed brownie mixes out there. But as I picked up the boxes and compared ingredients and prices, I just couldn’t force myself to do it. $9 for brownie mix! No way man. I knew I could come up with a delicious (and healthier) version.
So there I was. That girl standing in the middle of the grocery store aisle with two kids, scrolling through Pinterest looking for inspiration. Some people like their brownies a little cakier. Some people like them to have more of a cookie texture. Personally, I like a nice thick, fudgy brownie. And it must be deeply chocolate-y, because I am a self-proclaimed chocoholic. However I’m also a health-conscious chocoholic. Thankfully, I found a recipe that I felt would meet my requirements. But since I never truly follow a recipe without tweaking it, what I have for you today is my version of Fudgy Coconut Flour Brownies.
The original recipe that inspired my version comes from a lovely girl named Lauren who authors one of my favorite paleo blogs, Empowered Sustenance. She comes up with some amazing recipes and this one is no different. You can check out her original recipe here. As I said, I never truly follow a recipe, and I feel like that’s okay. In fact, I think that’s a great thing! I know that when I put a recipe out there, I love when I hear back from people telling me how they adjusted the recipe to suit their taste, dietary preference, allergies, etc.
Lauren’s original recipe for Paleo Coconut Flour Brownies would have been absolutely fabulous without one bit of tweaking. But one of my absolute favorite flavor combinations EVER is peppermint and chocolate. And since the occasion for which I was making these brownies was an Essential Oils class, I had the perfect addition in mind. What else? Peppermint Essential oil!
*NOTE: I do NOT recommend consumption of every brand of Essential Oil. The only brand I would use for this recipe is Young Living. I trust their purity and quality above others. I also took the liberty of adding in some extra chocolate by way of those really yummy little mini Enjoy Life Chocolate Chips. I like to stow them away in the freezer, and add them to the batter at the last minute. That way they kind of half melt as the brownies bake, but you still get a few here and there that haven’t melted. I love biting into the brownies and finding the little gems of chocolatey goodness.
And maybe by now you’re thinking…”but wait…how are brownies healthy?” Well, here’s the thing. I LOVE dessert. Yup. I’m a healthy girl. And I love eating. And I would be really sad if I thought I could never have a brownie ever again. So what do I do? Well first of all, I don’t frequently have baked goods around. But when I do, I choose really quality ingredients to bake with. For instance, I don’t use refined white sugar in the recipe. I use honey (you could use maple syrup). Of course sugar is still sugar, but raw, organic, local honey beats out refined white sugar that came from genetically modified sugar beet any day. You see my point? It’s about balance, folks. Eat a dang brownie once in a while. Ready for the recipe?
1/2 cup cocoa powder (like this)
1/2 cup plus 2 tbsp grass fed butter, melted
3 eggs, at room temp (that detail actually does matter, believe it or not)
tsp vanilla extract
5 drops peppermint essential oil (optional)
Preheat your oven to 300 degrees F.
Grease an 8×8 glass baking dish (I used butter. Coconut Oil would work as well).
Mix all of the ingredients (except the chocolate chips) into a large bowl. Stir until well incorporated. I used my hand mixer.
Fold in the chocolate chips.
Pour the batter into the greased baking dish and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
Let cool completely before cutting! I know this is really hard, but they need to cool before they will be set up in the center.
Resist the temptation people.
Cut into squares and enjoy with a tall glass of raw milk or some homemade Coconut Milk (get the recipe HERE)!
