In my family, we are major soup fans!
Although of course we enjoy a nice, hot and hearty soup in the winter, we don’t discriminate against soup in the summer time. But sometimes we just want a nice light, crisp and refreshing dish, and a chilled soup is just what we need!
I’ve had lots of chilled savory soups before, but as usual, I wanted to do something different this time.
So there in my tiny little kitchen I whipped up a delicious sweet and savory Chilled Mixed Berry Soup (Dairy-Free)! Nothing screams summer like perfectly ripened, sweet berries and fresh herbs! Although this soup is really lite, there’s a bit of richness and creaminess from the coconut milk (yes, this soup is dairy free!). Chilled Mixed Berry Soup is the perfect no-cook dish that’s delicious enough for a fun summer dinner party, yet simple enough to pack in a jar and take with you on a picnic.
